September is not a cool month across most of the main tourist route. Ephesus, Pamukkale and Antalya can still feel very hot in the middle of the day, so plan exposed archaeological sites for the morning. Istanbul is easier for long walking days than July or August, although warm spells can still happen.

Early September can still feel summery, especially in direct sun. By later September, evenings usually become more comfortable and a light layer can be useful on the water. You normally do not need a heavy jacket.

Cappadocia in September: warm days, cool sunrise, low rainfall
Cappadocia is especially comfortable in September. Nevsehir's long-term climate data shows an average high around 25°C, a low near 11°C and relatively little monthly rainfall compared with spring. That creates good conditions for Rose Valley, Red Valley, Pigeon Valley and outdoor viewpoints.
The main packing mistake is assuming the afternoon temperature also applies at sunrise. Balloon pickups can happen very early, and exposed viewpoints can feel cold before the sun rises. Bring a light jacket or fleece that can go into your day bag later.

Do not drop Ephesus or Pamukkale simply because the afternoons are warm. September is still a strong month for both because rain is relatively limited and the days are long enough to plan around the heat. Use the hottest middle part of the day for lunch, transfers, museums or hotel downtime where possible.

10 days: Istanbul + Cappadocia + Fethiye or Antalya
September is particularly good for a three-stop 10-day trip because the final coast section is still genuinely beach-friendly. A practical split is 3 nights Istanbul, 3 nights Cappadocia and 3 nights on the coast, with one travel day absorbed between regions.
Choose Fethiye if Oludeniz, boat trips, paragliding and a smaller coastal base appeal more. Choose Antalya if you want a larger city, Kaleici, easier access to Perge/Aspendos/Side and a wider choice of resort-style stays. 14 days: Istanbul + Cappadocia + Ephesus + Pamukkale + coast
Two weeks lets September work at its best. A strong route is Istanbul → Cappadocia → Selcuk/Ephesus → Pamukkale → Fethiye or Antalya. You get city culture, central-Anatolian landscapes, major archaeology and several warm coast days without rushing every stop.
A useful split is 3 nights Istanbul, 3 nights Cappadocia, 2 nights Selcuk, 1 night Pamukkale and 4 nights on the coast, allowing one night-equivalent for longer transfers. Should you put the coast at the end?
Usually yes. Ending in Fethiye, Antalya, Bodrum or Marmaris gives you a slower final few days after the more active city, valley and archaeology sections. It also means the trip finishes with swimming and boat time rather than another intensive sightseeing schedule.
If your international flight leaves from Istanbul, book a domestic flight back to Istanbul with a sensible buffer instead of relying on a tight same-ticket connection from the coast. September is popular enough that the most convenient domestic flights and well-located hotels can sell earlier than you expect.
