Choose May if your trip is mainly Istanbul, Cappadocia, Ephesus and sightseeing. Choose September if you want the same classic route but also want warm beach weather in Antalya, Fethiye, Marmaris or Bodrum.
Cappadocia is cooler than western and southern Turkey, especially before sunrise. That is why a month that feels perfect in Antalya can still require a jacket for a balloon pickup in Goreme. For most first-time routes, late April to May and September to early October give the easiest balance.

Official averages also show that Cappadocia mornings can be much cooler than the afternoon. In May, the average minimum in Nevsehir is around 9°C, while September averages around 11°C. That is why a light jacket can be useful for a sunrise balloon pickup even when the daytime forecast looks warm.
Istanbul is milder and more changeable. The Aegean and Mediterranean regions warm earlier and stay warm later. This difference matters most when you combine Cappadocia with a coast stop: the same suitcase may need a fleece for sunrise and swimwear for Antalya a few days later.

The best choice depends on whether your trip is built around sightseeing, balloons, beaches or lower temperatures.
April: very good for walking, but pack for changeable Cappadocia weather
April is a strong choice if you dislike heat. Istanbul is mild, Ephesus and Pamukkale are easier to explore than in summer, and spring landscapes can be attractive. Cappadocia is still cool: average daytime highs in Nevsehir are around 16°C, and mornings can be close to 5°C on average. Rain and sudden cold spells are possible.
Choose April if your priority is archaeology, hiking and city sightseeing rather than swimming. Bring layers and do not expect every day to feel warm.
May: the best all-round month for a classic first trip
May gives one of the easiest combinations. Istanbul is comfortably warm, Cappadocia is pleasant during the day, and Ephesus and Pamukkale are warm without the strongest midsummer heat. Antalya is already averaging around 26°C for daytime highs.
For a route such as Istanbul → Cappadocia → Selcuk/Ephesus → Pamukkale, May is hard to beat. It also gives long daylight hours for sightseeing. The main drawback is that spring showers can still occur, and Cappadocia mornings remain cool.

June: warmer and more reliable for beach time
June works well if you want to add the coast. Istanbul is warmer, Cappadocia is sunny and much less cold in the mornings, and the Aegean and Mediterranean are firmly in summer mode. The trade-off is heat at exposed archaeological sites. If Ephesus or Pamukkale is on your route, visit early.
July and August: excellent for beaches, harder for a multi-stop sightseeing route
These months suit travellers who actively want heat. Cappadocia is dry and warm, but valley walks are better early or late in the day. Istanbul can feel hot and humid. Ephesus, Pamukkale and southern Turkey can be very hot in the afternoon.
A July or August trip can still be excellent, but the daily rhythm changes: early sightseeing, long lunch or pool break, then evening activity. It is not the easiest season if your main goal is walking through several historic cities.
September: best if you want Cappadocia plus the coast
September is my strongest recommendation for travellers who want Istanbul + Cappadocia + beach time. Istanbul averages around 26°C for daytime highs and Cappadocia around 25°C. Antalya remains much hotter, averaging around 32°C by day, while the Aegean is also still very warm.
This means you can have comfortable Cappadocia sightseeing and still finish with swimming, boat trips and warm evenings in Fethiye, Marmaris, Bodrum or Antalya. Ephesus and Pamukkale can still be hot, so early starts remain useful.

October: excellent for sightseeing, especially early in the month
October can be one of the most pleasant months if you prefer cooler conditions. Istanbul averages around 21°C for daytime highs and Cappadocia around 19°C. Antalya remains much warmer at roughly 27°C.
Early October is particularly useful for travellers who want Ephesus and Pamukkale without summer heat. The trade-off is shorter days, cooler Cappadocia mornings and increasing rain risk as the month progresses.
November to March: rewarding, but choose it for the winter experience
Winter Cappadocia can be beautiful with snow, but it is a very different trip. Temperatures can fall below freezing, daylight is shorter and weather can affect transport and outdoor plans. Istanbul is cooler and wetter. Antalya is milder but winter rainfall is much higher than in summer.
Choose winter because you want winter scenery, quieter streets and a slower trip—not because you expect spring-style conditions at a lower price.
There is no month that guarantees a Cappadocia balloon flight.
Commercial balloon operations in Turkey must be authorized by the Directorate General of Civil Aviation, and Cappadocia has local aviation oversight because balloon traffic is intensive. A sunny hotel forecast is not the same thing as permission to fly.
Wind direction, wind speed, visibility and other operating conditions can cancel a flight in any season. Spring and autumn are popular because the broader travel weather is comfortable, not because flights are guaranteed every morning.
If the balloon is a priority, spend at least three nights in Cappadocia when possible and book the flight for your first morning. If that morning is cancelled, you may have another chance during the same stay.

This is an excellent spring route. You get comfortable city walking in Istanbul, cooler hiking weather in Cappadocia and much easier conditions at exposed ancient sites. If you add Antalya, treat swimming as a bonus in April and a more realistic part of the trip by late May.
June: Istanbul + Cappadocia + Fethiye or Antalya
June is a natural bridge between sightseeing and beach season. Spend the first half of the trip in Istanbul and Cappadocia, then slow down on the coast. Schedule Ephesus or Pamukkale early in the day if they are included.
September: Istanbul + Cappadocia + Ephesus + Fethiye/Antalya
This is one of the best mixed routes of the year. Cappadocia is warm without the same summer intensity, Istanbul remains lively outdoors and the south coast is still hot enough for swimming and boat days.

October: Istanbul + Cappadocia + Ephesus, with Antalya as the warmest coastal finish
October is excellent for archaeology and walking. If beach time matters, Antalya is usually a safer late-season choice than relying on every Aegean resort to feel summery. Pack a proper layer for Cappadocia mornings.
Should you choose the shoulder season to avoid crowds?
Weather is only one part of the decision.
May, September and early October are popular precisely because the conditions suit multi-stop trips. Do not assume every shoulder-season date will be quiet or cheap. Cappadocia cave hotels can sell well in spring and autumn, and popular balloon flights can fill early.
April and later October can feel calmer, but the weather becomes less predictable. July and August bring heavy demand to coastal resorts and major sights, while Cappadocia can still be busy because summer school holidays bring international visitors.
If you care about both weather and value, compare your exact hotel dates before buying flights. A good-value week in May can be more useful than choosing a theoretically cheaper month with weather that does not suit your itinerary.

Layers matter more than one heavy coat during the main spring and autumn travel seasons.
