Can you do all three in 7 days?
Yes, but the trip becomes very transfer-heavy. You will have only one full sightseeing day in each destination after arrival and departure time. If Cappadocia is your main reason for visiting Turkey, a focused 7-day Istanbul and Cappadocia itinerary is usually stronger.
Why 10 days works well
Ten days gives each region enough time to feel different. You can see Istanbul beyond the headline monuments, keep more than one Cappadocia morning available in case balloon weather changes, and still have two full Bodrum days after the cross-country transfer.
What changes with 14 days?
Use the extra days to slow the trip rather than adding many more stops. Give Istanbul a fourth night, Cappadocia another valley or underground-city day, and Bodrum enough time for a boat trip, a peninsula day and one slower beach or harbour day.

Do not add Pamukkale or Ephesus just because they are famous if you only have ten days. They are excellent places, but each extra stop creates another check-out, transfer and hotel change.

Arrive in Istanbul
Keep arrival day light. Walk Sultanahmet Square, see the Blue Mosque area from outside if timing is tight, and have an early dinner. Save paid monuments for a full sightseeing day.
Historic Istanbul
Use the day for Hagia Sophia, Topkapi Palace, Basilica Cistern and the Grand Bazaar area. You do not need to rush every monument; choose the interiors that matter most and keep time for walking between them.
Bosphorus + Karakoy/Galata
Take a Bosphorus cruise or public ferry, then continue around Karakoy, Galata or another neighbourhood outside Sultanahmet. This stops Istanbul feeling like only a museum district.
Fly to Cappadocia
Turkish Airlines currently lists direct Istanbul-Nevsehir flights at about 1 hour 20 minutes. Compare Nevsehir and Kayseri against both your hotel transfer and the later Bodrum connection. After arrival, keep the evening easy and confirm your balloon or next-day tour pickup.
Balloon morning + central Cappadocia
If you plan to fly, use your first full morning for the balloon so you retain a weather backup. After breakfast, visit Goreme Open Air Museum, Pasabag, Zelve, Avanos or take a shorter valley walk depending on your energy.
Underground city + valleys
Use a Green Tour-style route or private driver for an underground city, viewpoints and a longer valley area. Independent travellers can build a simpler day around Derinkuyu or Kaymakli plus one valley rather than trying to cover the entire region.
Cappadocia → Bodrum
When a seasonal Kayseri-Bodrum nonstop fits your date, it is the cleanest transfer. Current schedule data shows the fastest nonstop at about 1 hour 35 minutes on selected days. If it does not operate, compare a one-stop flight with the direct overnight coach, which current listings put at roughly 13 hours on average.
Bodrum Castle + harbour
Start with Bodrum Castle and the Museum of Underwater Archaeology, then walk the harbour, marina and central streets. Keep the evening free for the waterfront rather than adding a long excursion.
Aegean boat day or peninsula day
Choose a Bodrum boat tour for swimming coves and clear water, or use the day for Bitez, Yalikavak or another part of the peninsula. One well-chosen coastal day is better than trying to cross the whole peninsula repeatedly.
Depart through Milas-Bodrum Airport
Leave enough time for the airport transfer from the peninsula. If your international flight is on a separate ticket from an Istanbul connection, use a generous buffer or consider returning to Istanbul the evening before.

Do not assume you must use the same airport both ways. Nevsehir can be convenient for arrival from Istanbul, while Kayseri may give you a better onward Bodrum option. Compare the complete journey including hotel-to-airport transfer time.
Should you take the overnight bus?
It can make sense when the nonstop flight does not operate and connecting flights turn into an all-day airport journey. The bus is long, but it is direct and can save a hotel night. Choose it only if you sleep reasonably well on coaches; otherwise a connection may be worth the extra cost.

For a first trip without a rental car, Goreme and Bodrum town are the easiest operational choices. Move out to a peninsula resort only if beach or hotel time matters more than walking to the castle and harbour.

Bodrum makes season choice more important than on an Istanbul-Cappadocia-only trip.
April-May: excellent for Istanbul and Cappadocia walking. Bodrum is pleasant and quieter, though the sea may feel cool for travellers focused on swimming.
June: one of the strongest months for the complete route, with useful sea weather before the hottest part of summer.
July-August: best for guaranteed beach energy but hottest for Istanbul and Cappadocia sightseeing. Plan outdoor activities early and keep afternoons lighter.
September-early October: especially strong because the Aegean is still useful while sightseeing conditions often become easier than peak summer.
